Some of the best hikes in PEI are not the most advertised, based on the fact that PEI is.... well, pretty flat!
Here are some great images from PEI that you won't find on your travel brochure!
While not exactly in the woods, this picture of sunset in July at Stanhope Beach is one of my favourite spots. During the day lifeguards post tide times and water temperatures as well as watching over the area. From June to September, the 3-sided pavilion at Stanhope is supplied with picnic tables and wood for two fire-pits (one with a grill for cooking). This is an excellent spot regardless of the weather. Change rooms and monkey-bars included!
Take Hwy 15 to Brackely Beach (park fee $9.80 for a scenic drive/family), head East (right) about 5 miles. Time from Charlottetown, 25 minutes.

Brackley Beach on the first day of Summer. Nothing says "it's warm" like jumping into the water on the first day of Summer (even if it's less than seasonal out). The rain held off while we took our first dip of the season, although, if you're going to get wet anyway, what does a little rain matter? ;)
Greenwich is about an hours drive from the capital, however, it is said to be one of the most beautiful beaches on the Island. Be prepared to walk between 700 m to 2 km depending on which route you take (fairly well marked). This is a National Park and the above link should give up-to-date pricing.
